Do you prepare your own omlette, or do you have someone else prepare it for you? I sometimes make omlettes despite them being bad for my cholesterol. However, I think I value my sanity more than that since my diet mostly consists of fish and vegetables.
As for what I like in my omlettes, the usual. Pork Sausage (diced), sliced green pepper, mushrooms, olives and cheddar cheese. :)

I find it hard to accept that anyone would ever make or actually want to eat an omelette without a yolk in it. Omelettes made with eggwhites are something I saw in the US. yuck!
Eggwhites on their own are for meringue, not for omelettes! >_<

Obviously eggs, some meat (ground beef or bacon works), beans(baked, mexican), mashed tomatoes and some chili.

I like western omelets without cheese when I'm out. At home I usually do a blend of herbs with scallions when we have them.

Mushrooms, onions, bell peppers, garlic, cheese, bacon (sometimes), black olives (sometimes), jalapenos (sometimes), pimentos, salsa, black beans, and salt.
When I was little my family had this tradition of making junk eggs when we needed to use up our leftovers. Bascially it was a “leftovers omelette”. Sometimes they worked, sometimes they didn't.
I've had leftover steak shredded and put in an omelette (very tasty). I've also had meatloaf in an omelette (and quite enjoyed it). Worst junk eggs ever? When my mom tried to make lasagna junk eggs. Yeah….it was about as gross as it sounds.

Now that's what I call one stuffed omlette. And I take it your mother went into “mad kitchen scientist” mode when creating those junk omlettes? :)

Leftover meatballs and potatoes in brown sauce, is quite a delicious ingredient into an omelet.

I think I'll a near all meat omlette now that I've got the eggs for it. Four eggs, cheddar cheese, stir fried diced potatoes, chopped pork sausage, bacon, shredded steamed chicken, sliced beef franks and… mushrooms…
On second thought, maybe I won't try it… I don't like listening to my arteries harden… O_o
